Ingredients

  • 3 garlic cloves, minced
  • 1 onion, chopped
  • 1 tbsp Vegetable oil
  • 1 tsp turmeric powder
  • 4 cups vegetable broth
  • 1/2 large pineapple, skin removed and chopped
  • 2 cups basmati rice, rinsed thoroughly
  • salt, to taste

Instructions

  1. Toss the onion, garlic and tumeric in the vegetable oil in a large saucepan. Heat on medium-high heat, stirring constantly to caramelize, for 3 to 5 minutes.
  2. Deglaze the pan with stock, scraping up any browned bits for added flavor. Add the rice and pineapple and bring to a boil.
  3. Cover the rice mix and simmer on low for between 15 to 20 minutes, until the rice is cooked through. Season with salt as desired.
