A simple snack or a crunchy topping for yogurt parfaits, this recipe uses the delicious flavors of cinnamon and maple to complement the light flavor of rolled oats.
However, there is an added richness and nutritional value that comes from the addition of hemp hearts, flax seed, and pumpkin seeds to the mix.
This recipe can also be easily modified – switch out the pumpkin seeds for almonds or the maple for honey.

Maple Pumpkin Seed Granola
Ingredients
- 4 cups rolled oats
- 1/2 cup ground flax seed
- 1/2 cup Hemp Hearts
- 1/2 cup Sunflower Seeds
- 1 cup Pumpkin Seeds
- 1/2 cup oat bran
- 1 pinch salt
- 2 pinches cinnamon
- 2 tsp vanilla extract
- 1/2 cup maple syrup
- 1/2 cup cold-pressed canola oil
Instructions
- Preheat the oven to 300 degrees Fahrenheit. Cover a baking tray with a sheet of parchment paper.
- Toss the oats, flax seed, hemp hearts, sunflower seeds, pumpkin seeds and oat bran together in a large bowl. In a separate, small bowl, whisk together the salt, cinnamon, vanilla, maple syrup, and canola oil. Pour the oil mixture onto the oat mixture and stir until evenly combined.
- Spread the mixture in one even layer on the baking tray. Insert into the oven and bake for 20 to 25 minutes, stirring 2 to 3 times during the baking process to make sure the mixture is evenly browned. Remove and let cool before storing.
