- 1.5 cups dried green lentils
- 1 onion, thinly sliced
- 2 cloves garlic
- 28 oz diced tomatoes
- 1 carrot, cut into cubes
- 1 sweet potato
- 1 potato
- 1 tbsp olive oil
- 8 cups vegetable broth
- to taste Salt and Pepper
- Rinse the lentils with cold water .
- Prepare the vegetables: thinly slice the onion and the garlic; cut the carrot and the sweet potato and the potato into small cubes.
