Using coconut sugar as a sweetener is also a great choice, because it has a low glycemic index and doesn’t spike your blood sugar.

Healthy Oatmeal Raisin Spice Cookies Recipe

These oatmeal cookies feature many spices that support your health while adding a burst of flavour at the same time. Cinnamon helps regulate blood sugar, ginger supports circulation and boosts your immune system, and using coconut sugar as a sweetener has a low glycemic index and doesn’t spike your blood sugar.

Ingredients

  • 1 cup oats
  • 1/2 cup flour (oat flour, quinoa flour, or spelt flour)
  • 1/4 tsp sea salt
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp powdered ginger
  • 1 tsp minced ginger
  • 1 banana, ripe, mashed
  • 2 tbsp coconut sugar, or maple syrup
  • 1/4 cup ghee, coconut oil, or butter (melted)
  • 1/4 cup raisins
  • 1/4 cup dates, chopped
  • dark chocolate, optional

Instructions

  1. Preheat oven to 375.
  2. Mix together the dry ingredients.
  3. Mix together the wet ingredients. Fold together. Mix in the raisins and dates.
  4. Scoop out spoonfulls of the batter. Shape into hearts.
  5. Bake for about 12-15 minutes, or until lightly browned.
  6. While the cookies are baking, you can melt the chocolate in a double boiler. After the cookies cool, you can dip them in the chocolate to coat in a yummy layer!
