Instructions
  1. Whisk together the avocado, milk, and vegetable oil in a small bowl. In a large bowl, combine the flour, sugar, baking powder, cumin powder, coriander powder, and salt. Mix the avocado mixture into the flour mixture until just combined.
  2. Heat the coconut butter in a frying pan on medium heat, until a drop of water sizzles.
  3. Spoon 2 tbl. of each mixture on to the frying pan. Cook the pancakes for 2 minutes on each side, or until browned and cooked through.
  4. Blend the ingredients for the spicy sweet chipotle sauce together and set aside.
  5. Separately, combine the creamy cilantro sauce, blending until smooth.
  6. Serve the pancakes with the two sauces.
