Instructions
  1. Rinse the lentils with cold water .
  2. Prepare the vegetables: thinly slice the onion and the garlic; cut the carrot and the sweet potato and the potato into small cubes.
  3. In a saucepan, sweat the onion and garlic in olive oil over medium heat for 3 to 4 minutes.
  4. Add the remaining vegetables, lentils and vegetable broth.
  5. Bring to a boil, reduce heat and simmer uncovered for about 25 minutes or until the lentils are tender.
  6. Check the seasoning and serve
