The earthy sweet flavor of beets used in a thick and creamy dressing without cream puts a new twist on an old root.

Ingredients

  • 2 large beets, cooked and peeled
  • 1/8 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 pinch salt
  • 1 tsp coarse ground black pepper
  • 2 garlic cloves, finely minced
  • 1/8 cup honey

Instructions

  1. Blend all ingredients in a blender until smooth and fluffy, about 1 minute on high.
  2. Refrigerate until using. Drizzle on salad right before serving.
